Although the presence of women at the bars is of old data, their condition of labor specialty in the gastronomy and their strictly professional character, just appeared with a demanding profile during the years of postwar period and in several countries, centrally in the USA and England. This phenomenon propagated quickly and obeyed evenly to a greater inclusion of the woman in the activities (that until then had been reserved for men), the feminine movements of emancipation and the landslide of some oscurantists myths on the matter.

Globalization, as much as the objective conditions of each job market did, in our society, that the today girls successfuly go themselves on to adapt to the changes and they did it with the necessary virtues for it: dedication, pragmatism, vocation to lay way in a world regulated by men and for men, by means of a suitable qualification. And until little time, bartending did not escape to that general law.

Some of the reasons for the increase in demand of Barwoman at the local job market were exposed in a previous note. I now want to emphasize the evolutionary character that had this increase. For example, the axis in the election of a Barwoman in any establishment today no longer happens to have behind the bars an strictly glamourous figure. Things have left that pattern of simplicity, fortunately, in addition to being a completely insufficient condition.

Today it is no longer enough with being extremely pretty or glamourous: the search is looking for professionalism, quality of service, aptitude to develop quickly, grace and effectiveness. It is verified that the service vocation, well applied, simply elevates the average revenues over the results obtained by physical or natural attributes. Most of the times the companies having that perception, simply had replaced "decoration" for enterprise criteria.

To take care of people may be an "art" and the observation of this principle is the key indicating why so many Barwomen has success. Addded to this condition, the appropriate qualification and the indispensable technical knowledge, cannot surprise to us the remarkable growth of their demand. Even in wage or repaying terms, the difference is incredibly being more favorable to the girls better enabled with respect to the Barman, no matter how much proven professionalism they had. Like in so many sectors of our country, and in despite of the great changes that supported, the presence of our girls is working great and it's like an example of the necessary virtues for this moment: dedication, perseverance, constant qualification, profesionalization. Its actual demand is the perfect example of the answer that has deserved their efforts.
